This blend comprises Pink Bourbon lots sourced from three distinct producers: Algemiro Lasso, Luis Alfredo Arena, and Floriberto Arena. Pink Bourbon, a naturally occurring mutation of the Bourbon coffee varietal, is named after the pink-colored cherries it produces. Renowned for its vibrant acidity and a harmonious blend of floral, fruity, and sweet flavors, Pink Bourbon has become a highly coveted experience in the specialty coffee realm. The distinctive taste of Pink Bourbon coffee is attributed to its unique genetic makeup and the specific growing conditions under which it thrives.
These whole cherries are sealed in large drums for 30 hours where they will undergo a controlled fermentation before then being removed, de-pulped, and fully washed. The fermentation process adds another fantastic layer of complexity in the cup.
More notes from our importing partners, Shared Source:
La Argentina, in Huila, is a zone with high rainfall and soils rich in organic matter. Producers there have traditionally retained old varieties, and this western part of Huila has historically been overlooked by private exporters.
Shared Source has been working with producers who now make up ASPROCAAR since 2015. We’ve had a bit of a ride with them- purchasing great microlots at a local auction, and also landing some disappointing coffees from the group, attributing the quality decay to poor drying infrastructure and storage. We’ve been working closely with them to find solutions to the problems- donating moisture meters, requesting that parchment be properly stored in Grain Pro bags (and donating the Grain Pro!), and suggesting that producers bring parchment down from high-altitude farms (that are prone to heavy air moisture and re-humidification of dry coffee) to the group’s warehouse in town. We pay premiums for ecological production- this group is committed to healthy farming, wanting to use as little chemical fertilizers as possible. Many create their own compost onsite, reducing farm costs and tending to the land with respect and a view towards the future. We’ve been encouraging the group to continue pursuing quality, sustainable farm management and community development- knowing that a strong association will
benefit members, and allow them to connect with a healthy, diversified group of buyers.
We regularly return to visit, and purchase coffee at high prices. We’re proud and happy to work with the group- they’re self-motivated and organized professionals who want to see their community prosper.
